CORPUS CHRISTI, Texas — Sandi Clark's restaurant is hanging in there. In spite of the novel coronavirus pandemic.
It isn't the first time her business has faced challenges, such as road construction that shut down easy access to her building for several months.
The owner of Sandi's Diner on Ayers Street said the building has also been broken into four times since March.
But, the restaurant is persisting and is one of three that earned a Perfect Score from the Kitchen Cops.
All the previous Perfect Score stickers Clark has earned are gone since the windows had to be replaced, but she has begun the process of replacing the stickers with a 100 score in COVID preparation and a 100 from health inspections.
We do have one restaurant on tonight’s C list. It’s the Hunan Express at the corner of Airline Road and Williams Street. Inspectors gave them a score of 76.
They declined our request for an interview about how they’ve addressed violations which include not storing prepared chicken in cardboard boxes, providing accurate thermometers and all employees must wear effective hair restraints.
